Let me introduce you to The Spice of India, an authentic Ayurvedic organic restaurant in Fairfield, Iowa--a unique destination offering sattvic cuisine, crafted to nourish the body, mind, and soul like no other restaurant in the country.


About Chef

My name is Pooja Kalra. I am an interior designer by profession, the wife of an Ayurveda Professor and Physician, a proud mother of two growing children, and a passionate health enthusiast. In 2021, my family and I relocated to the United States, bringing with us a vision rooted in health and wellness, and inspired by my fascination with nutritious living, and my love for creating flavorful dishes. Being a designer, I planned to combine the principles of Sattvik and Ayurvedic cooking. This led me to establish the first-of-its-kind Ayurvedic restaurant in the state of Iowa, offering a unique dining experience that celebrates health and balance.

Dosha Oriented Meals A dosha oriented meal is rooted in the principles of Ayurveda, an ancient Indian system of medicine. It focuses on creating dietary balance based on an individual’s unique “doshas” or constitution, i.e. Vata, Pitta and Kapha. We at “The Spice of India” have designed foods that pacify or balance these doshas, resulting in delicious and health supporting dining.


Vastu Oriented Kitchen and Brahmasthan Dining Area   - I was fortunate to find a space featuring a Vastu-aligned kitchen and a Brahamasthan-centered dining area, which beautifully enhances the flow of positive energy and fosters a deep sense of harmony.


Sustainability Focus - The restaurant is thoughtfully designed to maximize natural light and maintain a comfortable temperature, eliminating the need for electric bulbs and air conditioners. This sustainable approach not only conserves energy but also creates a serene and eco-friendly environment for diners.

 

Vegetarian and Organic Restaurant - By operating as a vegetarian and organic restaurant, we actively reduce our environmental impact. This thoughtful choice reflects our commitment to sustainability and contributes to a healthier planet. For each dish, diners may select the level of spiciness of their choice. Many vegan options are also available.


Zero-Waste Cooking   - Since we offer a unique menu each day, we can carefully manage the quantity of food prepared. This approach helps to ensure freshness and reduce waste--aligning with our commitment to sustainability and efficiency in our daily operations.


Donations  - We ensure that no food goes to waste by donating all our leftovers to organizations like The Golden Magnolia and The Lord's Cupboard, bringing nourishment to those in need. 


Composting and Recycling - We carefully repurpose all vegetable and food waste into compost, contributing to creating nutrient-rich compost that supports sustainable practices and benefits the environment. We also recycle paper and quality plasticware used in serving our diners.
